We partnered with small producers in the Huila region of Colombia, known for its high altitude, rich volcanic soil, and meticulous coffee-growing traditions.

These farmers harvest by hand, using selective picking to ensure only ripe cherries are used. After being washed and sun-dried on raised beds, the beans are transported to a local cooperative where they’re cupped, graded, and approved for export.

It’s not mass production. It’s craftsmanship.

Allegro is roasted to medium-light, just enough to unlock its fruit-forward notes while preserving its clean, juicy finish.

We don’t overdevelop the roast or mask the origin. We let the bean speak. And in Allegro’s case, it sings.

To let those citrus notes really shine, we recommend:

  • Pour-over or Chemex for clarity

  • Water just off boil (195–205°F)

  • Brew ratio: 1:16 (e.g. 25g coffee : 400g water)

If you’re in a rush, a clean drip machine works too—just use filtered water and a medium grind.
